Resiliency of Local Eateries Dominates Restaurant Scene

Resiliency and diversity is a quality dominating our local restaurant scene.
One prime example is Cantina Verde in Green Mountain Falls. While all of our top eateries showcase a certain niche, with the Cantina certainly mesmerizing diners with their unique Southwestern-style dishes and Mexican entrées, their special nights have now become the talk of the town. And this is a town that craves championship-level food.
Customers, who want a break from Mexican plates or spicy tastes on occasion, are in luck. The weekends are often times for Chicken Fried Chicken feasts, complete with a knock-your-mouth off deluxe, specially-crafted sauce by head chef Mollie and mashed potatoes like you never experienced before, and corn. And then there is the Fried Chicken itself, a royal treat beyond words. Only one problem: You can’t get through this feast in one sitting, unless you want to rival the eating habits of TMJ staffers. If you do, you  deserve an Olympic medal.
Thursday night is Italian night. Some of the absolute gems featured recently have included Eggplant Parmesan, Beef Ragu over Rigatoni and Creamy Mushroom Lasagna with Garlicky Sautéed Spinach  Yes, this is not the typical Italian dish you may have sampled in the past, for example, in a restaurant in Colorado Springs.  This is the Real Italian Deal. Dishes are ready to inspire you to take an instant trip to Italy.
Wednesday is Locals Night, where you may encounter the real characters of Green Mountain Falls, including TMJ folks.  At the same, this is an ample opportunity to indulge yourself in a Smash Burger, and occasionally, some live acoustic music, at prices that cannot be beat.
Of course, the banter of locals is probably worth the meal itself.  In all seriousness there is nothing quite like a Cantina Smash Burger. The Cantina also prides itself on special holidays and celebrations, such as National Margarita Day. Mother’s Day will feature a menu that will attract all area Moms and their spouse and kids.
