It’s no secret that the Wines of Colorado, which boasts many top “Best Of” awards in the entire region, prides itself in great entrees, Colorado wines and beers and amazing spirits.
Whether it is a special grilled or blackened salmon, served with wild rice, seasonal vegetables, and dill sauce that kills the myth regarding the lack of quality seafood in the mountains; or their distinguished Wine and Buffalo Burgers, or lasagna dish, a real locals favorite, the Cascade eatery clearly shines. And when it comes to vino and brews, the word unique is showcased in pronounced fashion. But another rare quality often overlooked at the Wines of Colorado are their special pairing dinners that occur in the winter, or even their special nights during the week. For several years, the Wines of Colorado (WOC) have offered their customers special pairings with the best Colorado wines and/or spirits. Based on customer feedback, the restaurant will continue to feature special dinners as it moves into the winer season. Reservations are required and if the past is any indication of the future, special pairing participants are in for a real treat. Recently, the Wines of Colorado held their third annual Christmas Carol Winemaker dinner, a five-course culinary masterpiece that received stellar reviews (with the likes of buffalo chili, Marinated grilled shrimp skewers, smoked pork ribs, braised buffalo short ribs and bread pudding, do we need to say anymore) Look for more special pairing feasts during the winter and early spring, which are showcased on their website.
You can choose to even purchase wines or spirits from the menu and are often treated by the award-winning winemaker and/or Colorado distillery owner with their story showcasing the history and vintage notes paired with each dinner course. Once dinner begins, your server will guide you and your guests through the culinary experience ahead
And don’t forget the WOC weekly favorites, highlighted by steak nights, featured on Thursdays. On most occasions, a 14-ounce Ribeye trophy dish is served with different preparations of potatoes and vegetables each week. For example, one of the recent steak night combos sported a mega steak with roasted garlic butter broccoli and Gorda mashed potatoes topped with Rosemary red wine, Demi glaze. Spectacular, and one that conquered the culinary quests of TMJ staff members, who are a tough crowd to please based on their appetite.
The Trivia nights are also a big hit. These are featured on Wednesday night, starting at 7 p.m. The spots generally ill up fast, so call for reservations. They also are rounded out by special spinach Artichoke dip served with house-made tortilla chips to help entice you to make the right Trivia picks.
