Ho, Ho, Ho, So Good!

For breakfast on Christmas morning consider making a Finnish Pancake topped with Blueberry Sauce. Both recipes are easy to prepare. The blueberry sauce can be made ahead of time and the Finnish pancake bakes in the oven while you and your family open those gifts that are under the Christmas tree.
A Finnish pancake is a billowy, custard like oven pancake that is quite spectacular when brought to the table straight from the oven. The recipe has its origins in the dairy rich country of Finland.
Top each serving with this delightful, not too sweet blueberry sauce. Fresh blueberries are available now in our local supermarkets.
Finnish Pancake (serves four to six)
Use a heavy frying pan, with an ovenproof handle, or any shallow ovenproof baking pan about 10 inches wide and 3 inches deep. Set the oven to 425 degrees, put the 2 tablespoons of butter in the pan, and preheat the pan in the oven while you mix up the batter.
4 eggs
¼ cup honey
¾ teaspoon salt
2 cups milk
1 cup all purpose flour
2 tablespoons butter
- In a large bowl, beat together the eggs, honey, salt and 1 cup of the milk.
2. Add the flour, and beat until smooth.
3. Add the remaining 1 cup of milk and mix well.
4. Remove the pan from the oven and swirl it around to coat the pan with the butter.
5. Pour the batter into the pan and put it in the oven to bake for about 25 minutes or until a knife inserted in the center comes out clean.
Blueberry Sauce
1 package (18 0z.) of fresh blueberries
1/3 cup sugar
1 Tablespoon cornstarch
2 Tablespoons lemon juice
1/3 cup water
In a saucepan, combine sugar and cornstarch, add the remaining ingredients, and cook over medium heat, stirring, until mixture is thickened.
Serve this custard like oven pancake right away. It is delicious with blueberry sauce, sliced fresh strawberries, sliced canned peaches, or a favorite topping of your choice. If there are leftovers, be sure to put them in the refrigerator. This makes a scrumptious snack, too. Merry Christmas to all!
