Try Judge’s “Mexico City-Style” Fajitas

It’s hard to beat the sensation one receives when the server brings out a plate of fresh sizzling hot fajitas.

Whenever this delicious Mexican meal gets delivered to a table, it tends to capture the attention of the entire dining room.

Some say that food is the only art that stimulates every single one of a human’s senses, and a fajita proves this as fact. The combination of the smell, the sizzling sound, the bright colors of the peppers and onions has the ability to make the mouths water of anyone who is in a 20-square-foot radius.

Most Mexican restaurants and even some American eateries often carry their own rendition of the famous South-of-the-Border meal on their menu, even in Teller County. However, the contest for “Fajita Greatness” is over. No question about this fact, as no other fajita dish around compares to the fajitas dished up by Judge’s Char-Grill in Woodland Park. When Judge’s Head Chef and Owner Fernando Morales first decided to add Mexican entrees to his classical American menu, he wanted to make fajitas that stood out above any other that can be found in the Southern Colorado region.

Hailing from a small town just outside of Mexico City, Morales decided to put a little of his heritage into the Mexican side of Judge’s menu. The chef chose to not just make fajitas available for customers, but to dish them up “Mexico City-Style.”

The most common fajita meal comes with sautéed peppers and onions, flour tortillas, a choice of chicken, shrimp or steak and a side of Spanish rice and seasoned refried beans. But when they are made at Judge’s, they are basically the same, but with the addition of sautéed mushrooms and gooey cheddar jack cheese melted on top. Plus, customers get the choice of flour or soft corn tortillas.

According to Morales, pretty much the only place around where one can find that particular type of fajita is either at Judge’s or south of the Mexican border, particularly near the capital city. The portions or so huge that most will have to save some for a later time.

For those with leftovers, the dish makes a good topping for a baked potato. If that sounds good, Judge’s also has a fajita baked potato on their menu that is definitely worth trying.
